Recipe with cabbage and 3 eggs that you will love

With simple ingredients and easy preparation, you’ll achieve an incredible result: medallions of meat and cabbage with a creamy touch of white sauce and melted cheese .

Ingredients

For the medallions:

  • 3 eggs.
  • 600 g of cabbage.
  • 2 cups of water.
  • Salt to taste.
  • ½ cup of basmati rice.
  • 2 onions.
  • 50 g of butter.
  • 1 large carrot.
  • 2 cloves of garlic.
  • 1 tablespoon of various seasonings (thyme, rosemary, oregano).
  • 500g minced meat (half pork, half beef).
  • ½ teaspoon of sweet paprika.
  • Chopped parsley and dill.
  • Common oil for frying.

For the white sauce and gratin:

  • 50 g of butter.
  • 1 clove of garlic.
  • 2 tablespoons of flour.
  • 500 ml of warm milk.
  • 100 g of grated Gouda cheese.
  • 5 small tomatoes.
  • Chopped dill.
  • 200 g of grated mozzarella.

Preparation

  1. Cooking the cabbage:  Finely chop the cabbage and place it in a pan with two cups of water and salt to taste. Cook over medium heat, stirring occasionally. Once boiling, let it cook for 10 minutes. Then, strain and let it cool.
  2. Cook the rice:  Boil the rice in salted water for 10 minutes. Drain and set aside until cool.
  3. Prepare the sofrito:  Melt the butter in a pan over medium heat. Add the chopped onion and cook until translucent. Add the grated carrot with a pinch of salt and cook for a few more minutes. Add the chopped garlic and seasonings. Remove from heat and let cool.
  4. Prepare the meat:  In a large bowl, combine the ground beef with the cooled onion and carrot. Add the cooked rice, parsley, dill, and paprika. Mix well.
  5. Add the cabbage:  Add the cooked, cooled cabbage to the meat mixture and mix well with your hands. Finally, add the reserved eggs and mix until smooth.
  6. Assemble the medallions:  Heat a little oil in a frying pan. Using a mold or your hands, form medallions of the same size. Cook in the pan until golden brown on both sides. Set aside.
  7. Prepare the white sauce:  In another pan, melt the butter and add the grated garlic. Add the flour and mix constantly. Add the warm milk little by little, whisking constantly until thickened. When the sauce is ready, add the grated Gouda cheese and mix well.
  8. Prepare the tomato and cheese mixture:  Grate the tomatoes and mix them with chopped dill, a pinch of salt, and the grated mozzarella.
  9. Assemble the medallion stack:  Place one medallion as a base, add a layer of the tomato and cheese mixture on top, and top with another medallion. You can make multiple layers following the same procedure.
  10. Bake in the oven:  Sprinkle with grated mozzarella and bake at 180°C for 15 minutes, until the cheese is melted and golden.
  11. Finish with white sauce:  After removing from the oven, cover the medallions with the white sauce and cheese and serve hot.

Tips:

  • If you want a more intense flavor, you can use Sardinian cheese or pategra instead of Gouda.
  • Pair these medallions with a fresh  salad or baked potatoes for a more complete dish.
